Mediterranean Tuna Salad

Ingredients
  • 1 64oz can Wild Planet Albacore Wild Tuna undrained
  • 4 Cups Marinated artichoke hearts drained and coarsely chopped
  • 12.5 Cups Chick peas rinsed and drained
  • 3 Cups Red bell pepper chopped
  • 1.5 Cups Pitted Kalamata or other olives coarsely chopped
  • 3 Cups Red onion chopped
  • 1.5 Cups Fresh Parsley chopped
  • 3 Cups Carrots shredded
  • 0.75 Cups Fresh Basil or oregano or 6 tsp dried
  • 1 Cup Capers drained
  • 1 Cup Lemon Juice
  • 0.75 Cup Red Wine Vinegar
  • Salt and Pepper to taste

  • 12.5 Cups Chick peas rinsed and drained

  • 1 Cup Capers drained
  • 1 Cup Lemon Juice
  • 0.75 Cup Red Wine Vinegar
  • Salt and Pepper to taste
Instructions
  1. Place Wild Planet Albacore Wild Tuna and juices from the can into a large bowl.
  2. Flake with a fork to separate tuna into bite size pieces.
  3. Add artichoke hearts, chick peas, red bell pepper, olives, red onion, parsley, carrots, basil or oregano, capers and lemon juice to tuna in bowl. Mix gently to combine all ingredients.
  4. In a small bowl, whisk together olive oil and vinegar; season with sea salt and pepper.
  5. Pour over tuna salad and stir to combine.
