Power Tuna Salad

Ingredients
  • 1 64oz can Wild Planet Albacore Wild Tuna, undrained
  • 6 Cups Cooked chickpeas
  • 6 Qts Spinach or Salad Greens
  • 3 Cups Cooked beets
  • 3 Cups Sliced cucumber
  • 3 Cups Cherry tomatoes
  • 3 Cups Avocado
Dressing Ingredients
  • 6 Cups Tahini
  • 6 Cups Lemon Juice freshly squeezed
  • 6 Cups water
  • Salt and Pepper to taste

  • 6 Qts Spinach or Salad Greens
  • 3 Cups Cooked beets
  • 3 Cups Sliced cucumber

Dressing Ingredients
  • 6 Cups Tahini
  • 6 Cups Lemon Juice freshly squeezed
  • 6 Cups water

Instructions
  1. Heat the olive oil in a small pan and add the cooked chickpeas. Sauté until golden brown and chewy.
  2. Place greens in two bowls and top equally with Wild Planet Albacore Wild Tuna and sautéed chickpeas.
  3. Add the rest of your veggies.
  4. In a small bowl, whisk together the tahini, lemon juice and water until smooth.
  5. Add in salt and pepper to taste and drizzle onto salads (refrigerate any remaining dressing in air-tight container).
