Rotini with Wild Planet Albacore Wild Tuna, Lemon and Olives

Ingredients
  • 1 64oz can Wild Planet Albacore Wild Tuna undrained
  • 3 lbs Rotini, rigatoni or other dried pasta
  • 1 1/2 Cups Extra virgin olive oil
  • 6 1/4 Cups thinly sliced red onion
  • 1/4 Cup Lemon Juice
  • 1 peel Lemon zest
  • 1 1/2 Cups Minced garlic
  • 1/4 Cup Capers Rinsed and drained
  • 3/4 Cup Fresh Parsley Chopped
  • 1 1 9.5oz jar Kalamata olives pitted and quartered

  • 1 64oz can Wild Planet Albacore Wild Tuna undrained
  • 3 lbs Rotini, rigatoni or other dried pasta
  • 1 1/2 Cups Extra virgin olive oil
  • 6 1/4 Cups thinly sliced red onion
  • 1/4 Cup Lemon Juice
  • 1 peel Lemon zest
  • 1 1/2 Cups Minced garlic
  • 1/4 Cup Capers Rinsed and drained
  • 3/4 Cup Fresh Parsley Chopped
  • 1 1 9.5oz jar Kalamata olives pitted and quartered
Instructions
  1. Place Wild Planet Albacore Wild Tuna and juices from the can into a large bowl.
  2. Flake with a fork to separate tuna into bite size pieces.
  3. Cook the pasta in a large pot of generously salted water following package directions, drain.
  4. Meanwhile, heat the olive oil in a medium sauté pan over medium heat.
  5. Add the onions and cook, stirring frequently, until tender and lightly browned.
  6. Stir in the lemon zest and juice, garlic, capers, olives and tuna with juices.
  7. Heat through and season with salt and pepper to taste.
  8. Toss the tuna sauce with the hot cooked rotini and sprinkle with parsley.
