Ingredients
  • 1 64oz can Albacore Wild Tuna or Skipjack Wild Tuna undrained
  • 2 Cups White onion chopped
  • 2 Cups Scallions chopped
  • 8 Whole Eggs beaten in separate bowl
  • 1.5 Cups Flour
  • 1 Tbsp Pepper freshly ground
  • 4 Cups Panko bread crumbs
  • olive oil
  • Fresh Lemon
  • Mixed salad greens

  • 1 64oz can Albacore Wild Tuna or Skipjack Wild Tuna undrained
  • 2 Cups White onion chopped
  • 2 Cups Scallions chopped
  • 8 Whole Eggs beaten in separate bowl
  • 1.5 Cups Flour
  • 1 Tbsp Pepper freshly ground
  • 4 Cups Panko bread crumbs
  • olive oil
  • Fresh Lemon
  • Mixed salad greens
Instructions
  1. Gently flake can of tuna.
  2. Mix together with chopped onion, scallions, one beaten egg, flour, and black pepper until thoroughly combined.
  3. Heat a bit of oil in a frying pan over medium heat.
  4. Shape tuna mixture into balls and flatten into round cakes.
  5. Dip into the other bowl of beaten egg, then coat with a light layer of Panko breadcrumbs.
  6. Cook the tuna cakes until each side is crispy and golden brown (3-5 minutes on each side). Continue with remaining tuna mixture.
  7. Top with a squeeze of fresh lemon juice and serve on a bed of mixed salad greens.
Recipe Notes

• Can easily be turned into a panini or quesadilla.

• Serve with spicy sriracha aioli or sesame ginger sauce.
